Here are a few of my favorite healthy and easy winter soup recipes to get you started:

1. Curried Carrot & Apple Soup:


 

This soup is packed with flavor and nutrients. Carrots are a good source of vitamin A, which is important for healthy vision, and apples are a good source of fiber, which can help you feel full and satisfied. The curry powder adds a warm, spicy flavor to the soup.

Ingredients:

ü  2 tablespoons olive oil

ü  1 onion, chopped

ü  2 carrots, chopped

ü  1 apple, chopped

ü  1 tablespoon curry powder

ü  4 cups vegetable broth

ü  1 cup coconut milk

ü  Salt and pepper to taste

ü  Fresh cilantro, chopped, for garnish

Instructions:

1. Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.

2. Add the carrots, apple, and curry powder and cook for 5 minutes more.

3. Add the vegetable broth and coconut milk and bring to a boil. Reduce heat and simmer for 15 minutes.

4. Puree the soup with an immersion blender or in a blender until smooth.

5. Season with salt and pepper to taste.

6. Garnish with fresh cilantro before serving.

2. Creamy Asparagus-Potato Soup:

This soup is made with seasonal asparagus and potatoes, which are both good sources of vitamins and minerals. It's also creamy and delicious, thanks to the addition of cream cheese and milk.

Ingredients:

ü  1 tablespoon olive oil

ü  1 onion, chopped

ü  2 pounds asparagus, trimmed and chopped

ü  2 pounds potatoes, peeled and chopped

ü  4 cups vegetable broth

ü  4 ounces cream cheese, softened

ü  1 cup milk                 

ü  Salt and pepper to taste

ü  Fresh chives, chopped, for garnish

Instructions:

1. Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.

2. Add the asparagus and potatoes and cook for 5 minutes more.

3. Add the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes, or until the potatoes are tender.

4. Stir in the cream cheese and milk until smooth.

5. Season with salt and pepper to taste.

6. Garnish with fresh chives before serving.

3. Chicken Chili with Sweet Potatoes:

This chili is hearty and satisfying, thanks to the chicken, sweet potatoes, and beans. It's also made with a variety of spices, which give it a warm, flavorful taste.

Ingredients:

ü  1 tablespoon olive oil

ü  1 onion, chopped

ü  1 green pepper, chopped

ü  2 cloves garlic, minced

ü  1 pound ground chicken

ü  1 teaspoon chili powder

ü  1 teaspoon cumin

ü  1/2 teaspoon smoked paprika

ü  1/4 teaspoon cayenne pepper (optional)

ü  1 (14.5-ounce) can diced tomatoes, undrained

ü  1 (15-ounce) can black beans, rinsed and drained

ü  1 (15-ounce) can kidney beans, rinsed and drained

ü  1 (14.5-ounce) can sweet potatoes, drained and diced

ü  4 cups chicken broth

ü  Salt and pepper to taste

ü  Chopped fresh cilantro, for garnish

ü  Shredded cheddar cheese, for garnish (optional)

Instructions:

1. Heat the olive oil in a large Dutch oven over medium heat. Add the onion and green pepper and cook until softened, about 5 minutes.

2. Add the garlic and cook for 1 minute more.

3. Add the ground chicken and cook until browned, breaking it up with a spoon.

4. Stir in the chili powder, cumin, smoked paprika, and cayenne pepper (if using).

5. Add the diced tomatoes, black beans, kidney beans, sweet potatoes, and chicken broth.

6. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the chili is thickened.

7. Season with salt and pepper to taste.

8. Garnish with fresh cilantro and shredded cheddar cheese (if using) before serving.
