Recipe for Pakistani Beef Paya

Ingredients:

·         Six large beef trotters,

·         two tablespoons of oil,

·         two large, finely chopped onions,

·         two tomatoes,

·         three red chilies,

·         one teaspoon of green chilies,

·         one teaspoon of ginger-garlic paste,

·         one teaspoon each of cumin and coriander seeds,

·         one teaspoon each of red and green chili powder,

·         one teaspoon each of garam masala,

·         one teaspoon each of salt,

·         water to taste

Guidelines:

1. Give the trotters a good wash and let them soak in water for two to three hours.

2. In a big pot with hot oil, sauté the onions until they are light brown.

3. Cook for two to three minutes after adding the tomatoes, red and green chilies.

4. Include the ginger-garlic paste, garam masala, cumin, coriander, and red and green chili powders. Cook for one minute.

Tips:

ü  Chopped cilantro and ginger leaves can be added to the trotters if desired; the longer they cook, the more flavorful they will be. Naan or chapati can be served with turkey legs.
